A Few Free Moments

Man, these past few days have been sooooooo busy.  I didn’t mean to abandon the blog but my days were so packed that even my sleep suffered so you know, you have to make choices.  After class and work today and my 45 minute call with my Friday patient’s mother, I had a few moments to breathe.  I used some of them to do cardio and Jillian Michaels and most all the others toward research on cerebellar angiomas.




Now that I’m back in action, I’m just in time for a What I Ate Wednesday post but since I have been gone for a bit I’m making this a What I Ate This Week (with a few veggie-specific pictures)…  I figure I’ll group this by meal/special occasion, yes?

Breakfast

and roma tomato then one with cheddar cheese/French dressing
and the other with goat cheese/honey roasted peanuts/ranch dressing.

Killer plate of nachos made with crisp chips, Mexican dirty rice,
seasoned taco meat, salsa, lettuce, and nacho cheese sauce.

Super Bowl Sunday

Food truck loot: grilled cheese with Munster, Colby jack, red wine
braised short rib, arugula, and caramelized onions along with green
chile mac and cheese with roasted poblanos, red pepper,
red onion, sweet corn, and pepper jack.

Party spread: artichoke dip, buffalo chicken dip (our contribution #1), salsa,
chips, chocolate chip cookies the size of your head, oatmeal/applesauce/pecan
cookies (our contribution #2), banana bread cookies (our contribution #3),
pigs in the a blanket, and little smoky sausages in BBQ sauce.

Man, if you’re not salivating right now, I want your willpower… As you can see, regardless of how busy it’s been, it’s been a good time all around.  I’m thinking at the moment though I should call it a night, do the dishes, and sleep early.  Yup, that’s the plan.  G’night world.  I hope the beginning of your week has been less tumultuous and as tasty as mine!
