My Kind Of Happy Hour

This morning was my turn to provide refreshments for the clinic personnel.  Last night I baked up some applesauce-oatmeal-pecan cookies and a nice blueberry coffee cake.  I used this recipe for the cookies with the exclusion of raisins and addition of chopped pecans and this recipe for the coffee cake.  The latter seemed a bit sparse on dough but it worked out in the end and apparently was delicious because everything that I set out on the table, including sliced apples and colby jack cheese with crackers, was demolished by 2 o’clock.

In other news, my patient showed up today and we had a nice appointment.  Afterwards, I finished my report due on Monday and then I finished editing and filing my report from last week’s patient.  I felt really accomplished which is great because that just set me up to truly enjoy tonight and the rest of this weekend.  Jack is coming and we have plans on top of plans, starting with dinner at BRU tonight!!!  I’m so pumped.  Regarding recent eats, I have had quite the variety.  Breakfast cake with maple-peanut butter sauce.

Steel cut oatmeal mixed with plums topped with 5 fruit protein frosting and dried pineapple.

Turkey, gouda, sweet & spicy mustard sandwich with blueberries, dried cherries, and a dried apricot.

A singular Do-Si-Do (the rest of the box was dominated by the rest of the student room).

Steel cut oatmeal mixed with banana and topped with peanut butter, marshmallow fluff, and chia seeds.

Toast with ricotta, cinnamon, nutmeg, allspice, and apple butter.

Hawaiian chicken (made from this recipe with regular Sweet Baby Rays sauce and the addition of half a cup of orange juice) over roasted veggies and a bed of spinach.

The best eat of all, you ask?  That had to be the cupcakes I scored last night at a local bakery that hosts Happy Hour every Thursday when every cupcake is only $1.

I got four [clockwise from the top left]: Vanilla - vanilla cake with vanilla buttercream (and a pink Super Bowl ring), Baconator – banana cake with peanut butter buttercream and bacon cumbles, Chocolate Xtreme – chocolate cake, chocolate buttercream, chocolate ganache drizzle and chocolate malt ball, and Reese’s – chocolate cake with peanut butter filling and peanut butter buttercream with Reese’s cup garnish.

I tried the Xtreme last night and boy, the cake was incredibly moist and perfect.  The frosting was creamy dreamy and the malt ball on top was wonderful.  I was blown away.  I had picked up the Vanilla cupcake for Mary as a “It’s Almost Friday” gift.  She liked it.  We even decided then and there to go and make good use of Cupcake Happy Hour again sometime soon!  =D  It took some self-talk but I saved the Baconator and Reese’s to split with Jack.  I’ll let you know how great they are after we dig in sometime this weekend.
For now I’m off to go work out, shower, and get ready for tonight.  I can’t wait to hang out with some lovely people tonight.  Have a freaky Friday everyone!

  1. Oh man, that cupcake was awesome! I finished it off for breakfast this morning haha. I am pretty much a dessert for any occasion kind of girl, even if it is just celebrating waking up for a Saturday class:) Can't wait for Thursday!
